Hypsizygus tessellatus is a type of edible mushroom native to East Asia. It is commonly cultivated and consumed in countries like Japan, Korea, and China. The name “turtle shell” refers to the unique pattern on its cap, which resembles the texture of a turtle’s shell.

This is one of my favorite cooking mushrooms for pasta; right behind enoki.
